SueSue Grichka Salad
A hearty, colorful, and
nutrient-packed salad featuring fluffy grichka (buckwheat), fresh vegetables,
sweet and savory toppings, and creamy farm-made feta cheese. This salad
combines fresh garden flavors with satisfying crunch and a bright lemon
dressing.
Ingredients
For
the Salad
- 1 cup grichka (buckwheat), cooked for 3 minutes and
drained
- 2 cups lettuce, chopped
- 2 cups spring spinach
- 1 cucumber, diced
- 2 tomatoes, chopped
- 1 cup raw broccoli
- ½ red onion, thinly sliced
- 1 cup cauliflower florets, chopped
- 2 tablespoons fresh dill, chopped
- ½ cup chickpeas, drained and rinsed
- 2 diced lemons inside the salad
- ¼ cup raisins
- ¼ cup mixed nuts, chopped
- ½ cup farm-made feta cheese, crumbled
Crunchy
Toppings
- Honey-mustard coated pretzels, crushed
- 1 pear, sautéed until lightly caramelized
- Crispy onion skins, air-fried and crushed
- A sprinkle of sumac
Dressing
- Juice of 1 lemon
- 1 tablespoon apple vinegar
- 2 tablespoons grapeseed oil
- Salt and freshly ground black pepper, to taste
Instructions
- Cook the grichka for about 3 minutes. Drain any
remaining water and allow it to cool completely.
- In a large serving bowl, combine the lettuce, spinach,
cucumber, tomatoes, onion, cauliflower, dill, chickpeas, raisins, nuts,
and crumbled farm-made feta cheese.
- Add the cooled grichka and gently toss to combine.
- In a small bowl, whisk together the lemon juice, apple
vinegar, grapeseed oil, salt, and pepper.
- Drizzle the dressing over the salad and toss lightly.
- Finish with the crushed honey-mustard pretzels, sautéed
pear slices, crispy crushed onion skins, and a sprinkle of sumac.
- Serve immediately and enjoy.
