My mother Shkofe is a wonderful cook; her trshi was so famous. My brother and I used to go to the special cold room for trshi and jams and eat all cucumbers from my mom’s trshi. 
Still remember all those memories. Mine does not come out as her crunchy and beautiful. She made it effortless and natural. Or maybe I was to young to see the efforts. 
Trshi or Trshiat in Kurdish ترشیات،  in Farsi Torshi or Torshijat ترشئجات is made with different kinds of vegetables and herbs. Such as celery, cauliflower, carrots, beets, garlic, cabbage, eggplant, other vegetables, onion, shallots, eggplants, and herbs such as tarragon and basil, parsley, and coriander. Vinegar and salty water are the main ingredients. 
There are many kinds of trshi, and many people in the Middle East make this delicious pickled food.
