Type: One pot soup.

Ingredients:

- 1 cup kale, chopped

- 1 cup spinach, chopped

- 2 tablespoons fresh dill, chopped

- 1 teaspoon turmeric powder

- 1 teaspoon Himalayan salt

- 1 green long pepper, not chopped, neither sliced

- 1/2 cup lentils

- 1/2 cup chickpeas (canned or cooked)

- 1/2 cup green peas (fresh or frozen)

- 4 cups protein broth (meat, chicken, or mushroom)

- 3 cloves garlic, minced

- 1/4 cup fried onions (for garnish)

- 1/4 small box of vermicelli

- Olive oil for sautéing

- Yogurt (optional, for serving)

- 1/2 fresh lemon, juiced


Instructions:

 

1. Heat a tablespoon of olive oil in a large pot over medium heat.

2. Add minced garlic and chopped green long pepper. Sauté for 1-2 minutes until fragrant.

3. Stir in the chopped kale and spinach. Cook for about 3-4 minutes until they start to wilt.

4. Add chopped dill, turmeric powder, and Himalayan salt. Mix well to combine all the flavors.

5. Pour in the protein broth of your choice (meat, chicken, or mushroom). Bring the soup to a gentle simmer.

6. Add lentils, chickpeas, green peas, and vermicelli to the pot. Allow the soup to simmer for about 20-25 minutes until the lentils are tender and the vermicelli is cooked.

7. Once the lentils are cooked through and the vermicelli is tender, squeeze in the juice of half a fresh lemon. Taste the soup and adjust seasoning if needed.

8. Serve the soup hot, garnished with a sprinkle of fried onions on top for added flavor and texture. For an extra creamy touch, add a spoonful of yogurt to each serving before serving.
